Besan Ka Dhokla


  • 1 cup besan
  • ½ cup dahi
  • Salt to taste
  • ¼ tsp ginger paste
  • ¼ tsp green chillies paste
  • ½ tsp citric acid
  • Water to mix the batter
  • ½ tsp baking soda
  • ½ tsp red chilli powder
  • ½ tsp rai
  • 4 to 5 kadhi patta
  • Hara dhaniya for garnish
  • Idli stand greased


Mix together the besan, dahi, salt, ginger, chilli paste, and citric acid or vinegar. Add enough water to make a paste of drooping consistency. Leave for about one hour (for best results) gets the steamer ready. Gently mix in soda and transfer immediately to the greased tin. Sprinkle the red chili powder, rai and kadhi patta. Place the teamer, cover the steamer tin. Steam for 20 min. add remove from vessel, garnish and serve hot.
