Take a pan sauté chicken for a while and keep it aside. In the same pan add little oil sauté onion, garlic, leek, celery & carrot for about 3 minutes on slow fire after that add mushroom & half cooked chicken toss it in a same pan add stock to it & season it, bring to a boil, then reduce the heat to low and simmer for 15 minutes or cook until chicken and the vegetables are tender, skimming when off fat as necessary. Check the seasoning pours it in individual bowls, garnish with coriander sever hot.
You need to take onions, celery, leeks and carrot (should be very less), sauté all veggies together in a pan and add a kilo of washed chicken bone & 600 ml of water, simmer it for at least 45 minutes. Strain it keep it aside for cooling.
Note Does not use leave of leek and celery other wise it will change the taste of soup?
TIP This clear chicken soup is really scintillating & delicious without the addition of corn flour. Other veggies can also be added along with the ones named here.
