Ginger Yell salad



Ingredients

  • 200gms Asparagus; trimmed and cut. Diagonally into 1/2". Pieces (about 2 2/3 c)
  • Olive oil spray
  • Sea salt & pepper seasoning to taste
  • 1/2 c Orange
  • 1 tbsp Limejuice
  • 1/2 tsp Garlic shoots chopped (as per availability) or Grated Ginger
  • 1 tbsp to 2 olive oil
  • 7 c Chopped romaine lettuce
  • 3 tbsp slivered almonds; toasted

Method

Preheat oven to 180°. Spread asparagus on baking sheet in a single layer; season with olive oil, garlic, salt & pepper. Roast until asparagus is tender, 10-12 minutes. Set aside. Chop oranges, grated ginger, olive oil & lemon juice; mix well in a bowl. Arrange lettuce on individual plates or platter; top with asparagus. Mix dressing again; pours over salad. Garnish with almonds.
