1 tbsp chilli pd., 2 tsp onion pd., 1 tsp ground cumin, 1 tsp paprika, 1 tsp garlic pd., 1tsp oregano, 1 tsp sugar, ½ tsp salt. Mix all ingredients to prepare taco seasoning.
Soak brown rice over night. Add ½ tsp. oil. Sauté onion, pepper and garlic until soft, 8-10 minutes. Add brown rice, taco seasoning and cumin; cook and stir for 2 minutes. Add chopped tomatoes and broth; bring to a boil. Reduce heat; cover and simmer until liquid is absorbed and rice is tender, about 20 minutes. Sprinkle with cheese and serve garnish with fresh parsley.
