Almond & Hung Curd Sandwich



Ingredients

  • 2 small zucchini, diced
  • 1 tomatoes, diced
  • 10 chopped green or black olives
  • 1 red or green bell pepper, diced
  • 1/2 onion, preferably sweet onion, diced
  • 1/2 cucumber, diced
  • 1/3 cup hung curd
  • 1/4 cup sliced toasted almonds
  • 2 Tbsp fresh basil
  • 1 tsp. fresh thyme
  • 1 tbsp olive oil
  • 2 tsp cup balsamic vinegar
  • Salt and fresh ground pepper to taste

Method

Chop all vegetables in a bowl. Crumble feta or curd into bowl; add almonds and herbs and mix. Mix together oil and vinegar, pour over vegetable mixture and toss well. Serve as is as a salad or stuff in bread and cut into desired shape and serve it.
